How about planning a casual gathering and inviting your girlfriends over for fun drinks and easy yet delicious food? It would be perfect for some “mommy time”!
This past weekend, some fabulous friends and I got together for a fun summer gathering out in the patio. I planned an easy, portable menu filled with delicious finger foods, such as Swiss & ham with pickled vegetables sandwiches, Brie and Pomegranate Crostinis (recipe courtesy of PAMA), salad cups and refreshing PAMA signature drinks. Best part? Nothing takes more than 20 minutes! No worries, we are sharing the recipes with you! I kept the décor simple, which you can easily recreate the ideas using patio string lights, lanterns, decorative pillows and fresh flowers.
Let’s talk about the food and drinks, shall we? “PAMA also pairs well with most foods, and is used in both cooking and baking to create vinaigrettes, glazes, sauces, and desserts.”
Serve up these delicious Brie and Pomegranate Crostinis (recipe courtesy of PAMA). They are so easy to make and trust me, they will be a big hit!
Follow the recipe below (courtesy of PAMA) to make your own Brie and Pomegranate Crostinis
Ingredients
- 1 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1/4 cup PAMA
- 1 French baguette, sliced into 1 inch slices
- 2 tbs olive oil
- 8 wt oz brie cheese, sliced
- 1/4 cup pomegranate seeds
- 2 tbs chopped flat leaf parsley
Instructions
Add the balsamic vinegar, brown sugar, and PAMA to a saucepan over high heat. Bring to a boil, stirring occasionally. Reduce heat to a simmer and allow to cook until thick and syrupy, about 15 minutes. Preheat the broiler on your oven. Add the bread slices to a baking sheet, brush the top side with oil. Broil until golden brown, about 3 minutes (if your broiler heats unevenly, you may need to rotate the baking sheet halfway through), remove from oven. Flip the slices over, place sliced brie on the non-toasted side. Return slices to the broiler until cheese has melted, 1-2 minutes. Plate crostinis, drizzle with balsamic glaze (add glaze to a plastic squeeze bottle for easy and pretty presentation), sprinkle with seeds and parsley. These ham & swiss with pickled vegetables sandwiches are perfect for easy entertaining! For a fun presentation, wrap them in wax paper or craft paper sandwich wraps tied with twine and handwritten tags.
Tip: You can prepare the sandwiches the day before the party. Place them in freezer bags and refrigerate overnight.
For extra fun, serve your favorite summer salad in mini cups. Guests can enjoy their mixed greens while mingling.
Entertaining tip: You can fill up mini labeled bottles with delicious salad dressing. They also make great take-home favors.
For dessert, make simple lemon cupcakes with vanilla frosting topped with pomegranate seeds. Perfect summer combination of flavors!

Ingredients
- 1 1/2 oz. PAMA Pomegranate Liqueur
- 3/4 oz. Premium Sour Apple Vodka
- 1/2 oz. Cranberry Juice
Instructions
Mix ingredients in martini shaker. Shake well and strain into martini glass.
